Recipe: Avocado Herb Salad

Olive oil from Imperia in Liguria, Italy.

6 cups of herb salad
1/2 avocado, medium-sized (peeled and sliced)
1/4 cup of olive oil
1/4 cup of feta cheese
Salt and black pepper to taste.

Rinse the leaves and dry. Place in bowl with olive oil and salt. Lightly toss until leaves are coated. Put coated leaves on plate. Top with avocado slices, cheese, and then, pepper. Serve immediately.

For extra color and taste, add cherry tomatoes. They go great with avocado cubes. Happy eating!!!
